Pan Fried Foie Gras on Caramelised Apple with a Crispy Salad with a reduced Port Sauce

Fillet Beef Tartar served with a breaded oyster and a Greek yoghurt dressing

Carpaccio of Tuna with a wasabi mayonnaise and a Sweet& Sour Vegtables followed by Refreshing Lemon Sorbet

Fillet of Venison with a port poached pear and a Marsala wine sauce and Herb Mash

Confit of Duck with an orange Cointreau sauce, a fresh herb mash and vegetables

Pan Seared Turbot Fillets served on Tagliatelli with Clams with a shi-take cream

Irish Fillet Steak with a Roquefort sauce, vegetables and Sautéed Potatoes
