The small and brown Arbequina olives are mostly grown in Catalonia, Aragon and Andalusia region of Spain. The main grove is located in the county of Baix Emporda in the province of Girona, Catalonia, just fifty kilometres from the border with France, and twelve kilometres from the Mediterranean Sea.
During the ripening Arbequina olives change colour from a pale green to pink and finally to purple. However, the colour of the olive oil varies from emerald green to golden yellow, which mostly depends on the moment of harvesting.
