Cinco Jotas or the or the 5J Iberico ham uses only 100% Cerdo Iberico pigs, unlike virtually all other producers of Jamon Ibérico who have bred these pigs with the Duroc variety.
The Cerdo Iberico is an ancient breed of Spanish pig and found only on the Iberian Peninsula. These lucky pigs spend much of their lives roaming around the forest meadow called the Dehesa woodlands of Western Spain, feasting on a diet consisting primarily of acorns (bellota, in Spanish).
It’s the acorn diet which creates a uniquely marbled ham full of succulent, nutty that is like no other ham in the world!
Produced by Sanchez Romero Carvajal, Cinco Jotas is now simply referred to Jamon Iberico as Jabugo. The town of Jabugo has a special microclimate and pastures that make it the perfect rearing place for pure Iberian pigs and the production of quality hams.
