The Paleta Iberico de Bellota is the cured shoulder of the finest acorn fed Iberico pigs, cured under the watchful eye of the experts at Pedro Lancho. These free range pigs spend most of their lives in the Dehesa (medieval oak forests) gorging on acorns.

The paleta, or shoulder, of the Iberico pig is slightly leaner than the ham, and some of its devotees assert that it has a more concentrated flavor. However, because it is smaller and requires less curing, it has a better price. Enjoy this exquisite shoulder without the bone for easier access to the succulent, acorn (bellota) -infused meat!
